Water (variable) 21lbs, 8oz
TEMPERATURE: 74 degrees F
Place: Water in mixing bowl
MIX: 1 min low, scrape bowl and paddle, continue mixing 2 minutes on med speed.
REST: 10-15 minutes
FRY: 375 degrees F
